Cook your pho noodles according to the instructions on your packet. When the noodles are cooked, strain them and set aside.
While the noodles are cooking, heat oil in a medium saucepan. Once hot, add the chopped chili. minced garlic, and minced ginger and cook for 1 to 2 minutes.
Mix through the fish sauce, soy sauce, ground coriander, stock (or water), and salt and pepper. Taste the sauce for seasoning, and adjust as desired.
Mix through the cooked and strained noodles to the saucepan. Coat the noodles evenly in the sauce. If you find your sauce is too thick, add a bit of water and adjust seasonings as desired.
Turn off heat and mix through the green onions. Serve, garnished with your choice of optional garnishing.
