These quick and easy Vietnamese garlic noodles are perfect for busy weeknights, lazy weekends, pot lucks and more!

Ingredients
  

  • 320 grams (11.30 ounces) dried or fresh pho noodles (flat rice noodles)

For The Sauce

  • 1 tablespoon neutral flavored oil such as vegetable oil
  • 1 fresh red or green chili deseeded and roughly chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 teaspoon fish sauce
  • 2 teaspoons soy sauce
  • ½ teaspoon ground coriander
  • ¼ cup stock such as chicken stock, vegetable, or water
  • Salt and Pepper to taste
  • ¼ cup (20 grams, 0.70 ounces) green onions spring onions, finely chopped

To Garnish (optional)

  • Red or green chili deseeded and chopped into small pieces
  • Beansprouts blanched
  • Lime wedges
  • Fresh basil leaves roughly chopped
  • Green onions spring onions, finely chopped
  • Fresh cilantro coriander, roughly chopped

Instructions
 

  • Cook your pho noodles according to the instructions on your packet. When the noodles are cooked, strain them and set aside.
  • While the noodles are cooking, heat oil in a medium saucepan. Once hot, add the chopped chili. minced garlic, and minced ginger and cook for 1 to 2 minutes.
  • Mix through the fish sauce, soy sauce, ground coriander, stock (or water), and salt and pepper. Taste the sauce for seasoning, and adjust as desired.
  • Mix through the cooked and strained noodles to the saucepan. Coat the noodles evenly in the sauce. If you find your sauce is too thick, add a bit of water and adjust seasonings as desired.
  • Turn off heat and mix through the green onions. Serve, garnished with your choice of optional garnishing.
