Spicy Garlic Noodles

Ingredients
  

  • 800 grams (28 ounces) Fresh udon noodles
  • 1 teaspoon of sriracha or to taste
  • 1 tablespoon light soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • Salt to taste.
  • 1-2 red chilis deseeded and roughly chopped
  • 2 tablespoons neutral flavored oil such as vegetable oil
  • 1 teaspoon (2-3 cloves) minced garlic
  • 1 teaspoon minced ginger
  • 1 ½ teaspoons red pepper flakes chili flakes, optional
  • Green onions spring onions finely chopped, to garnish, optional
  • Lightly toasted sesame seeds to garnish, optional

Instructions
 

  • Cook your noodles according to packet instructions. Once cooked, drain and set aside.
  • Combine the sriracha, light soy sauce, brown sugar, sesame oil, fresh chili, and salt in a small bowl. Taste for seasoning.
    Adjust as desired. You can add more sriracha for extra spice. Make sure your sauce is slightly salty.
  • In a large wok or pan heat the neutral flavored oil. When the oil is hot, add the minced garlic and minced ginger. Saute for 1 to 2 minutes. Be careful not to burn your garlic and ginger.
  • Add the drained noodles to the wok or pan and stir from for 1 to 2 minutes. Then add the sauce mixture. Continue to stir fry for a further 2 to 3 minutes.
  • Mix through the red pepper flakes and taste for seasoning. Adjust as necessary. Turn off heat and serve. If desired, garnish with finely chopped green onions and lightly toasted sesame seeds if desired.
