Salmon Pasta Without Cream

Ingredients
  

  • 320 grams (11.30 ounces) dried pasta such as spirals, fettucine or linguine
  • 2 tablespoons neutral flavored oil such as vegetable oil
  • 1 medium (120 grams, 4.23 ounces) Brown Onion finely chopped
  • ½ teaspoon onion powder optional
  • 1 teaspoon (1-2 cloves) minced garlic
  • 335 grams (11.82 ounces) canned salmon drained
  • 80 grams (2.82 ounces) frozen peas, defrosted
  • ¾ cup (188 ml/grams, 6.63 ounces) milk
  • ½ cup (125 ml/grams, 4.41 ounces) stock of choice e.g. chicken stock, vegetable stock, water
  • 1 tablespoon lemon juice or to taste
  • Salt and pepper to taste
  • ¼ cup (30 grams, 1.06 ounces) Parmesan cheese plus extra to garnish
  • Green onions finely chopped, to garnish

Instructions
 

  • Cook your pasta according to packet instructions. Once cooked, drain and set aside.
  • Meanwhile, heat oil in a medium sized saucepan. Once hot, add the finely chopped brown onion and cook until the onions are soft and lightly browned.
  • Add the onion powder (if using), and minced garlic, and saute for 1 to 2 minutes. Be careful not to burn your garlic.
  • Add the drained canned salmon and fry for 1 – 2 minutes. Season lightly with salt and pepper.
  • Next, add the green peas, milk, stock of choice, lemon juice, and Parmesan cheese. Bring liquid to a gentle simmer, then reduce heat to low. Season with salt and pepper to taste.
  • Turn off heat and mix through the cooked and drained pasta. (see note 1). Serve, garnished with extra Parmesan cheese and green onions, if desired.

Notes

If you want your pasta to have a bit more sauce, add a bit more milk or stock and adjust seasoning to taste.
