Ingredients
  

  • 500 grams (17.64 ounces) fresh or dry gnocchi
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 medium (120 grams, 4.23 ounces) Brown Onion finely chopped
  • 1 teaspoon (1-2 cloves) minced garlic
  • ½ cup (125 ml/grams, 4.40 ounces) heaving whipping cream or milk
  • ¼ cup (63 grams, 2.22 ounces) cheese e.g. mozzarella, or cheddar
  • 2 tablespoons (20 grams, 0.71 ounces) pesto of choice
  • Salt and Pepper to taste
  • Parmesan cheese finely grated, to serve
  • Freshly chopped herbs e.g. parsley chives, green onions, to serve

Instructions
 

For The Sauce

  • In a medium sized saucepan, heat the oil. Once hot, add the brown onion. Cook until softened and lightly browned. Then add the minced garlic and saute for about 1 minute.
  • Mix through the grated cheese, cream (or milk) and pesto. Season with salt and pepper to taste. Then turn off heat once the cheese is melted and the sauce is smooth.

For the Gnocchi

  • Prepare gnocchi according to packet instructions. Once cooked, drain gnocchi. Mix cooked gnocchi through sauce.
  • Taste for seasoning and adjust as desired. Serve
