Lemon Garlic Noodles

These super simple and quick lemon garlic noodles will become one of your go to recipes in no time!
Perfect for those busy weeknights, last minute dinner parties, or even to bring to that pot luck, you can make these garlic lemon noodles any time of the year.

Ingredients
  

  • 320 grams (11.30 ounces) dried noodles such as fettuccine or linguine

For The Sauce

  • ¼ cup butter
  • 80 grams (2.28 ounces) bacon, such as short cut, diced
  • 150 grams (5.29 ounces) mushrooms such as button mushrooms, sliced
  • 100 grams (3.53 ounces) Chicken thighs or breast cut into small pieces and lightly salted
  • 1 ½ teaspoons (2-3 cloves) minced garlic
  • 1 ½ tablespoons lemon juice or to taste
  • 1 teaspoon lemon rind
  • Salt to taste
  • Pepper to taste

To Garnish (optional)

  • Fresh Green Onions or parsley finely chopped
  • Parmesan Cheese grated

Instructions
 

  • Cook your noodles according to packet instructions. When they are cooked, strain the noodles. Set aside.
  • In a small saucepan heat butter over medium to low heat. Add the chopped bacon, mushrooms, and chicken, and fry until the bacon and chicken is cooked and the mushrooms have reduced in size.
    Then add the garlic and saute for about 1 minute. You do not want the garlic to brown.
  • Turn off heat and mix through the lemon juice and lemon rind.
  • Toss through the cooked and strained noodles until evently coated. Season with salt and pepper to taste. See note 1.
  • Serve as is, or with finely chopped green onions and grated parmesan cheese.

Notes

  1. If you would like your noodles to have a bit more sauce, add a little bit of stock (such as chicken stock or vegetable stock) or water and season to taste.
