320grams(11.30 ounces) dried noodles such as fettuccine or linguine
For The Sauce
¼cupbutter
80grams(2.28 ounces) bacon, such as short cut, diced
150grams(5.29 ounces) mushroomssuch as button mushrooms, sliced
100grams(3.53 ounces) Chicken thighs or breastcut into small pieces and lightly salted
1 ½teaspoons(2-3 cloves) minced garlic
1 ½tablespoonslemon juiceor to taste
1teaspoonlemon rind
Saltto taste
Pepperto taste
To Garnish (optional)
Fresh Green Onions or parsleyfinely chopped
Parmesan Cheesegrated
Instructions
Cook your noodles according to packet instructions. When they are cooked, strain the noodles. Set aside.
In a small saucepan heat butter over medium to low heat. Add the chopped bacon, mushrooms, and chicken, and fry until the bacon and chicken is cooked and the mushrooms have reduced in size. Then add the garlic and saute for about 1 minute. You do not want the garlic to brown.
Turn off heat and mix through the lemon juice and lemon rind.
Toss through the cooked and strained noodles until evently coated. Season with salt and pepper to taste. See note 1.
Serve as is, or with finely chopped green onions and grated parmesan cheese.
Notes
If you would like your noodles to have a bit more sauce, add a little bit of stock (such as chicken stock or vegetable stock) or water and season to taste.
