Cook your noodles according to packet instructions. Drain and set aside.
While the noodles are cooking, finely chop your green onions. Set aside.
In a small bowl, mix the oyster sauce, sesame oil, sugar (optional), light soy sauce, dark soy sauce, and salt to taste. Slightly over season your sauce.
Heat neutral flavored oil in a large wok or pan. Once hot, saute the garlic for 1 to 2 minutes. Be careful not to burn your garlic.
Then mix through the cooked and drained noodles, the sauce, and the chopped green onions. Stir fry for 3 to 4 minutes. Turn off heat.
Serve. Garnish with lightly toasted sesame seeds.
