Garlic Butter Noodles With Chicken

These garlic butter noodles with chicken are perfect for when you are short on time on those busy weeknights, or last minute dinner parties.
Enjoy them on their own, or garnished with a light sprinkling or freshly grated parmesan cheese, and fresh herbs like chives or parsley.

Ingredients
  

  • 320 grams (11.30 ounces) dried noodles such as fettuccine or linguine
  • ¼ cup butter
  • 1 ½ teaspoons (2-3 cloves) minced garlic
  • 200 grams (7.01 ounces) Chicken thighs or breast cut into small pieces, lightly salted
  • 1 ½ tablespoons lemon juice or to taste
  • 1 teaspoon lemon rind
  • ¼ cup (63 ml/grams, 2.22 ounces) stock of choice e.g. chicken stock, vegetable stock, or water
  • Salt to taste
  • Pepper to taste
  • ½ cup (35 grams, 1.23 ounces) parmesan cheese finely grated

To Garnish (optional)

  • Fresh Parsley finely chopped
  • Parmesan Cheese grated

Instructions
 

  • Cook your noodles according to packet instructions. When they are cooked, strain the noodles and set aside.
  • In a small saucepan heat butter over medium to low heat. Add the chicken and fry until the chicken is cooked. Then saute the garlic for 1 to 2 minutes.
  • Mix through the lemon juice, lemon rind, and stock (or water), and season with salt and pepper. Taste for seasoning and adjust to your liking.
  • Mix through the cooked noodles and parmesan cheese, until evenly coated. Serve as is, or garnish finely chopped fresh parsley and extra freshly grated parmesan cheese.
