Garlic Butter Noodles

Ingredients
  

  • 320 grams (11.30 ounces) dried or fresh linguine or fettuccine

For The Sauce

  • 2 tablespoons (30 grams, 1.06 ounces) butter
  • 1 ½ teaspoon minced garlic
  • ¼ cup (63 ml/grams, 2.22 ounces) stock such as chicken stock, vegetable, or water
  • Salt and Pepper to taste
  • ½ cup (35 grams, 1.23 ounces) parmesan cheese finely grated
  • ¼ cup fresh parsley finely chopped
  • Freshly squeezed lemon juice to serve

Instructions
 

  • Cook your noodles according to the instructions on your packet. When the noodles are cooked, strain them and set aside.
  • While the noodles are cooking, heat butter in a medium saucepan. Once hot, add the minced garlic and cook for 1 to 2 minutes.
  • Mix through the stock (or water), and salt and pepper. Taste the sauce for seasoning, and adjust as desired. You want to slightly over season with salt.
  • Mix through the cooked and strained noodles to the saucepan. Coat the noodles evenly in the sauce. If you find your sauce is too thick, add a bit of water and adjust seasons as required.
  • Turn off heat and mix through the parmesan cheese. Garnish with freshly chopped parsley, and some freshly squeezed lemon juice if desired.
