Spicy Alfredo Pasta Recipe

Ingredients
  

  • 320 grams (11.28 ounces) dried pasta such as tube pasta, spirals, spaghetti, linguine
  • 3 tablespoons (45 grams, 1.60 ounces) butter
  • 1 teaspoon (1-2 cloves) minced garlic
  • 1 cup (250ml/grams, 8,82 ounces) heavy whipping cream or thickened cream
  • 1 cup (120 grams, 4.23 ounces) Parmesan cheese, finely grated
  • 2 teaspoons Sriracha sauce or to taste
  • Salt and Pepper to taste
  • 1 teaspoon red pepper flakes to serve

Instructions
 

  • Cook your pasta according to packet instructions. Once cooked, drain the pasta and set aside.
  • While the pasta is cooking, heat butter over low-medium heat until melted in a medium sized saucepan.
  • Then add the minced garlic and cook for about 1 minute. Be careful not to burn your garlic.
  • Add the cream and bring to a gentle simmer (you don’t want the liquid to boil). Cook, whisking often, until the liquid starts to thicken slightly. This could take about 5 minutes.
  • Then gradually add the Parmesan cheese. Whisk until melted.
  • Next, add the Sriracha, salt and pepper to taste. Turn off heat and mix through cooked and drained pasta. (see note 1). Serve, garnished with red pepper flakes.

Notes

  1. If you find your sauce has become too thick, you could thin it out by adding a bit of water or more cream. Then adjust seasoning as needed.
