- 320 grams (11.30 ounces) dried noodles, such as dried ramen noodles
For The Sauce
- 2 tablespoons (30 grams, 1.06 ounces) butter
- 1 teaspoon minced garlic
- 3 teaspoon fish sauce
- 2 teaspoon oyster sauce
- 2 teaspoons light soy sauce
- 2 teaspoons sriracha or to taste
- ¼ cup water
- Salt and Pepper to taste
- ½ cup (60 grams, 2.12 ounces) parmesan cheese, finely grated
- ¼ cup green onions spring onions, finely chopped
- Lemon juice to serve
Cook the noodles according to packet instructions. Once cooked, strain noodles and set aside.
Meanwhile, in a medium sized saucepan, heat the butter over medium heat. Add the minced garlic and saute for 1 to 2 minutes. Then add the fish sauce, oyster sauce, soy sauce, sriracha, water, and salt and pepper. Stir to combine. Taste for seasoning, and adjust as desired. Add the cooked and strained noodles to the saucepan. Toss the noodles through the sauce until evenly coated. If you need to make your sauce a bit runnier, add 1 tablespoon of water at a time. Turn off heat. Mix through the grated parmesan cheese and green onions. Serve, as is or squeeze some lemon juice on top and sprinkle some extra chili flakes on top if desired.
If you find your noodles are too dry, add a bit more water and adjust seasoning to taste.
If you want your noodles less hot, add less Sriracha sauce.
