Honey Garlic Chicken and Noodles

Ingredients
  

  • 320 grams (11.30 ounces) dried noodles such as rice noodles, ramen noodles
  • 750 grams (1.50 pounds) boneless skinless chicken breast or boneless skinless chicken thigh fillets, cut into bite sized pieces
  • Salt and pepper to season chicken
  • 60 grams (2.12 ounces) plain flour (all purpose flour) or as needed
  • 3 tablespoons (45 grams, 1.58 ounces) butter
  • 1 teaspoon (1-2 cloves) minced garlic
  • ¾ cup (188ml/grams, 6.63 ounces) stock of choice, such as chicken stock, vegetable stock
  • ¾ cup (188ml/grams, 6.63 ounces) heavy whipping cream (or thickened cream)
  • 1 ½ tablespoon white vinegar or apple cider vinegar
  • 1 tablespoon light soy sauce
  • cup (90 grams, 3.17 ounces) honey

Instructions
 

  • Cook your noodles according to packet instructions. Once cooked, drain and set aside, reserving about 1 cup of pasta water.
  • Season chicken pieces with salt and pepper. Then coat the chicken in flour, shaking off any excess.
  • Heat butter in a large frying pan over high heat. Once hot, add the chicken and cook until the chicken is golden and cooked through.
  • Reduce heat to medium and add the garlic, sauteing for about 1 minute. Be careful not to burn your garlic.
  • Next, stir through the stock, cream, vinegar, soy sauce, and honey. Stir to combine.
  • Bring the sauce to a simmer and simmer for about 1 minute, or until the sauce slightly thickens. Taste for seasoning and adjust as desired.
  • Turn off heat and remove pan from heat. Mix through cooked pasta. If you want your noodles to have more sauce, mix through some of the reserved pasta water. Adjust seasoning as desired. Serve.
