- 320 grams (11.30 ounces) dried pasta, such as penne, spirals, bowtie, linguine
- 2 tablespoons neutral flavored oil such as vegetable oil
- 1 small (120 grams, 4.23 ounces) Brown Onion finely chopped
- 1 ½ teaspoons (2-3 cloves) garlic, minced
- 335 grams (11.82 ounces) Canned Tuna, drained
- Salt and Pepper to taste
- ¼ cup (66 ml/grams, 2.20 ounces) heavy whipping cream (or thickened cream)
- 2 tablespoons (20 grams, 0.71 ounces) pesto of choice, or to taste
- ¼ cup (30 grams, 1.06 ounces) Parmesan cheese, finely grated, plus extra to garnish
- ¼ cup (66 ml/grams, 2.20 ounces) stock of choice, such as chicken stock, vegetable stock, optional
- Fresh parsley or green onions finely chopped, to garnish
Cook your pasta according to packet instructions. Once the pasta is cooked, drain and set aside. Reserve about 1 cup of pasta water.
While the pasta is cooking, heat the oil in a medium sized saucepan. Then, add the onion and cook until the onions are softened.
Add the minced garlic and saute for about 1 minute. Then, add the drained tuna and fry for about 2 minutes. Lightly season with salt and pepper.
Reduce the heat to low medium. Mix through the cream, pesto, and Parmesan cheese. If you want your pasta to have more sauce, add some of the stock. Season with salt and pepper.
Then mix the cooked and drained pasta. Mix well, taste for seasoning and adjust as desired. Turn off heat. Serve, garnished with grated Parmesan cheese, and fresh parsley (or green onions).
