This easy to make butter lemon sauce pasta is a delicious meal to enjoy all year round and can also be made in advance.

Ingredients
  

  • 320 grams (11.28 ounces) dried pasta such as tube pasta or spirals
  • 120 grams (4.23 ounces) bacon diced
  • ¼ cup (60 grams, 2.12 ounces) butter
  • 1 ½ teaspoons (2-3 cloves) minced garlic
  • 1 teaspoon dried mushrooms ground, optional
  • 1 tablespoon lemon juice or to taste
  • ½ teaspoon lemon zest
  • ½ cup (60 grams, 2.12 ounces) parmesan cheese finely grated, plus extra to garnish
  • ¼ cup (62 grams, 2.18 ounces) heavy whipping cream
  • Salt to taste
  • Pepper to taste
  • Fresh green onions or chives chopped, to garnish
  • Cashews or pine nuts roughly chopped, to garnish

Instructions
 

  • Cook your pasta according to packet instructions. Once cooked, drain the pasta and set aside.
  • Meanwhile, heat half the butter over low to medium heat in a small saucepan.
    Once melted, add the minced garlic and ground dried mushrooms (if using) and saute for about 1 minute. Be careful not to burn your garlic.
  • Add the diced bacon and cook until crisp to your liking.
  • Add the remaining butter and melt.
  • Turn off heat, and mix through the lemon juice, lemon zest, parmesan cheese, cream, salt, and pepper to taste.
    Serve, garnished with extra parmesan cheese, fresh green onions or chives, and chopped cashews or pine nuts.
