Great for busy weeknights, lunch boxes, and more. This easy to make butter lemon sauce pasta is a delicious meal to enjoy all year round and can also be made in advance.
320grams(11.28 ounces) dried pastasuch as tube pasta or spirals
120grams(4.23 ounces) bacondiced
¼cup(60 grams, 2.12 ounces) butter
1 ½teaspoons(2-3 cloves) minced garlic
1teaspoondried mushroomsground, optional
1tablespoonlemon juiceor to taste
½teaspoonlemon zest
½cup(60 grams, 2.12 ounces) parmesan cheesefinely grated, plus extra to garnish
¼cup(62 grams, 2.18 ounces) heavy whipping cream
Salt to taste
Pepper to taste
Fresh green onions or chiveschopped, to garnish
Cashews or pine nutsroughly chopped, to garnish
Instructions
Cook your pasta according to packet instructions. Once cooked, drain the pasta and set aside.
Meanwhile, heat half the butter over low to medium heat in a small saucepan. Once melted, add the minced garlic and ground dried mushrooms (if using) and saute for about 1 minute. Be careful not to burn your garlic.
Add the diced bacon and cook until crisp to your liking.
Add the remaining butter and melt.
Turn off heat, and mix through the lemon juice, lemon zest, parmesan cheese, cream, salt, and pepper to taste. Serve, garnished with extra parmesan cheese, fresh green onions or chives, and chopped cashews or pine nuts.
